Blueberry Matcha Green Tea Ice Cream: Vegan Ninja Creami

Since I got my Ninja Creami ice cream maker, my freezer has been full of healthy ice cream recipes perfect for whole food plant-based diets. This blueberry matcha vegan ice cream is made with a base of oats and sweetened with dates.

Does matcha ice cream have caffeine?

Be aware that matcha has caffeine, so if you are avoiding it, you can leave it out of this recipe. Yes, it won’t be matcha ice cream, but date-sweetened blueberry ice cream is still amazing, and you can add vanilla, lemon balm, or mint to make yours extra special.

What Does Matcha Green Tea Ice Cream Taste Like?

Matcha powder has earthy and slightly bitter tones and really blossoms when we add it to a creamy sweet base like in this recipe.

The blueberries add a sweetness of their own that pairs well with the flavor of matcha.

It is a “grown-up” flavor that may be too complex for picky eaters or someone looking for a more traditional flavor like vanilla or chocolate.

Why Use the Ninja Creami?

I love my Ninja Creami and how it turns whole food plant-based ingredients into creamy frozen treats, by shaving the frozen pint with its creamerizer paddle.

It’s easy to clean, you can even put the parts in the top dishwasher rack!

Do I have to use vegan cream cheese to make vegan treats in the Creami?

While the booklet with your Ninja Creami calls for vegan cream cheese, it’s not a must. There are other ways to make your pint creamy, and even respinning it can do a great job.

Can I make this if I don’t have a Ninja Creami?

Yes, you can make this recipe by blending and freezing it into ice cube trays, then blending in your high-speed blender or a food processor.

You may need to add some extra non-dairy milk or leave the cubes out a few minutes before you blend them.

What is matcha ice cream?

Green Tea Ice Cream is a type of ice cream that contains green tea powder as one of its ingredients. It’s a popular flavor of ice cream in Japan and is naturally green from the matcha.

I remember the very first time I had green tea ice cream. It was in my pre-vegan days, and I was in Chinatown in NYC at the Chinese Ice Cream Factory. I was in my early twenties and had never seen green tea, red bean, almond cookie, or lycee ice cream before.

Even then, I loved to try new flavors, and I fell in love with the slightly bitter and sweet combo of matcha green tea ice cream.

What are the best green tea ice cream flavors?

This vegan cream creation is more fruit than anything, which is why I think it would be as home in a smoothie bowl as it is as a dessert.

You can use a range of fruit to replace the blueberries, though red fruits like raspberries or strawberries will turn the mixture into a strange brown color.

You can use fresh or frozen blueberries in this recipe. And the fruit I want to try in it next is one of these: pineapple, mango, lychee, or yuzu.

What do you need to make this plant-based Ninja Creami matcha ice cream?

It’s super easy, and you probably have everything on hand right now! You will need:

  • Matcha green tea powder
  • Medjool dates, or harder dates that you soak for a few hours
  • Fresh or frozen blueberries
  • Rolled oats or JOI Oat Milk Powder or unsweetened oat milk

And that’s it!

How much matcha should I use?

That depends on your taste, and the awesome thing about making the mixture before freezing means that you can add 1/2 the amount taste, and adjust up to suit you.

However, if you are new to matcha, I would start with 3/4 teaspoon.

It’s all about the options: substitutions

I mentioned earlier that we can leave out the matcha to make this caffeine-free, and I’d add in at least a 1/2 teaspoon of vanilla.

Don’t love oats in your ice cream? You can leave them out and add in either 2 tablespoons of almond or cashew butter or 1/4 cup of soaked cashews. Either base will give you a great ice cream consistency.

Don’t want to use dates to sweeten? You can use a liquid sweetener of your choice to taste instead. I’d recommend maple syrup, or you can even make a simple syrup with coconut sugar.

How do you make homemade matcha ice cream?

If you are using rolled oats, you’ll first make your oat cream by blending the rolled oats in cold water for about 30 seconds, then strain.

If you are using the JOI powder or nut butter, you don’t need to strain at all. Just blend all the ingredients together at the same time.

If you use date paste or date syrup rather than whole dates, you can mix the ingredients right in the Ninja Creami pint and freeze without blending.

How to store your Ninja Creami Pint Containers in the freezer?

After you’ve made your pint, place it on a level surface in your freezer for at least 24 hours so it can freeze solid all the way through.

Leave the container out on the kitchen countertop for 5 to 10 minutes before spinning for a more creamy texture after the first spin.

First Time Using the Ninja Creami or Looking for Tips?

What to do before you spin?

If your freezer is extra cold, leave your pint out on the counter for about 10 minutes before you spin. Or you can run it under warm water for a minute or two.
Add the Ninja Creami pint to your outer bowl, put the creamerizer paddle in the outer bowl lid, then click the lid on. Place that in your Ninja ice cream machine and spin on the light ice cream or smoothie bowl setting.

Help! My Creami mixture is powdery or crumbly!

It just means you need to respin and possibly add a little extra non-dairy milk. Don’t panic, it happens to everyone.

Is this a smoothie bowl or a dessert? Well, it can be either! With oats, dates, blueberries. and sweetened with dates this can be anything you want it to be.

Ingredients  

  • 1 cup blueberries (fresh or frozen)
  • 1 cup water
  • 3 tbl JOI oat milk powder (or use 1 cup plus 3 tbl oat milk or oat cream and leave out the water)
  • 3 pitted medjool dates
  • 1.5 tsp match green tea powder

Instructions 

  • Add the blueberries to your Ninja Creami pint

  • Blend the water, JOI oat milk powder, dates, and matcha until smooth.

  • Freeze for 24 hours on a level surface.

  • Take out and level top by scraping with a tablespoon if there’s a hump or volcano. Level out even.

  • Place into the outer bowl and put the outer lid on.

  • Spin on light ice cream.

  • If powdery or crumbly add a few tablespoons of non-dairy milk and spin again using the respin button.

  • You can repeat that step if needed or even add a liquid sweetener if it’s not quite sweet enough.

  • Level off any leftovers and store in the freezer in the Ninja Creami pint.

  • Pull out when ready to eat the leftovers and spin on light ice cream as above.
